Stuffed zucchini blossoms

If you've never had zucchini blossom, it is time to try some! They are a seasonal item, usually found in Framer's Markets in June.

Making this dish will make you feel like you have a FIVE stars restaurant right in your kitchen. The blossoms don't have much aroma, but their velvety texture will be very satisfying and not to mention, low-carb.

The original Tuscan recipe is called “fiori di zucca fritti”, which means fried zucchini flowers, and they are stuffed with ricotta cheese. I am presenting my personal interpretation which is dairy-free and air fried.

Ingredients

10 zucchini flowers

almond vegan cheese (recipe here)

Instructions 

  • Make the almond cheese and bake it less for a creamier texture- we are mimicking the texture of ricotta; 

  • Flavor the cheese as desired- I used dill and garlic for mine; 

  • Carefully stuff each flower with enough cheese, and air fry them in the air frier at 360F for 12-15 minutes.
