Chicken sausage, hummus, and veggies breakfast

If you are looking for an egg-free breakfast, here is one version. Eggs are not well tolerated by many, so people are constantly looking for alternatives, and so am I.

My focus is always on a high protein content breakfast, with healthy carbs and a lot of variety.

RECIPE

Ingredients

2 chicken sausages or sausages of choice (fish, pork, vegan)

2 Tbsp hummus (recipe here) or store-bought organic hummus

6 rainbow baby tomatoes

1 small cucumber

2 radishes

olive oil, balsamic vinegar, salt, and pepper as needed

Instructions 

  • Cook the sausages as directed on the package; 

  • Place all ingredients on a plate, and eat.
