Oven-baked salmon with rainbow veggies

If you’re looking for an easy, healthy, and vibrant meal, oven-baked salmon with rainbow veggies is the perfect choice. Not only is this dish packed with essential nutrients, but it’s also bursting with colors and flavors, making it a feast for both the eyes and the taste buds.

Salmon is a powerhouse of omega-3 fatty acids, which support heart health, reduce inflammation, and improve brain function. It’s also an excellent source of high-quality protein, vitamin D, and B vitamins. When paired with a mix of colorful vegetables, this meal becomes a nutrient-dense option that supports overall wellness.

Each vegetable brings its own set benefits:

  • Red peppers – High in vitamin C and antioxidants, great for immune health.

  • Zucchini – Hydrating and rich in fiber, beneficial for digestion.

  • Red onions – Loaded with antioxidants, known for their anti-inflammatory properties.

  • Broccoli – A cruciferous vegetable that supports detoxification and hormone balance.

You can serve with rice if you want for more carbohydrates, or without for a low-carb meal.

Recipe

4-6 pieces of fresh salmon or tofu

one red onion, sliced in 6

one zucchini, 1/4 inch slices

one summer squash, 1/4 inch slices

7-8 Baby Bella mushrooms

8 red baby bell peppers

10 broccoli florets or broccolini

5 Tbsps olive oil

pink Himalayan salt and black pepper as needed

salmon marinade: 2 Tbsp GF soy sauce, 1 Tbsp honey, 1 Tbsp ginger-garlic paste, 2 Tbsp lemon juice

Instructions

  • Make the marinade by mixing all the marinade ingredients, and marinate the fish/tofu for 1 hour;

  • Line a sheet pan with parchment paper and nicely arrange the fish and veggies;

  • Drizzle some olive oil on the veggies, and add salt, pepper, or other preferred spices;

  • Bake at 400°F for 25 minutes or until the fish is ready;

  • You can serve it with a portion of brown rice and some spicy mayo.
