Duck eggs veggie frittata

If you are eating eggs, you should have egg diversity also, not just veggie diversity. Duck eggs have more protein than chicken eggs, so this frittata has 30g of protein, which makes this recipe a perfect breakfast choice for hormone balancing and muscle growth.

RECIPE

Ingredients 

3 duck eggs

2 purple asparagus spears, chopped

4 shiitake mushrooms, chopped

1/4 summer squash, chopped

1/2 tsp salt

1/4 tsp ground black pepper

1/2 Tbsp avocado oil

Instructions 

  • Beat the eggs in a bowl, add all the chopped veggies and spices, and mix well; 

  • Heat some avocado oil into an oven-safe stainless steel pan, add the egg mixture, and cook halfway; 

  • Turn on the oven broiler, transfer the frittata under the broiler, and cook until done; 

  • Serve the frittata with broccoli sprouts, rainbow veggies, cucumber, radishes, and olive oil. Season everything as needed.
