Rainbow veggie medley

Getting enough diversity in your diet can be frustrating, so if you need inspiration, look no further! This veggie medley is not only diverse but also low-carb! Make a bigger quantity and enjoy it for several days.

RECIPE

Ingredients

1 cup Brussels sprouts trimmed and quartered (about 3/4 pound)

1/4 Napa cabbage, chopped

3 medium rainbow carrots, peeled and cut into 1/2-inch cubes

1 medium red onion, chopped

2 apples, skin on, core removed, and cut into cubes 

1 summer yellow squash, cubed

1 zucchini, cubed

1 tsp garlic powder

1 tsp dried thyme

1.5 tsp pink Himalayan salt 

1 tsp black pepper

3 Tbsp avocado oil

Instructions 

  • Prep and chop all your ingredients; 

  • Add the avocado oil to a pan, onion, carrots, Napa cabbage, Brussels sprouts, salt, and cook for 5 min on medium heat;

  • Add the rest of the veggies and herbs, and cook for another 5 minutes; 

  • Serve with your favorite protein (chicken, fish, tofu, etc.).
