  1. Marinate the Chicken

    • Make the marinade. Marinade recipe here.

    • Blend all marinade ingredients until smooth.

    • Coat the chicken (or your preferred protein) thoroughly with the marinade.

    • Cover and refrigerate overnight for the best flavor.

  2. Prepare the Mango Salsa

    • Make the salsa. Salsa recipe here.

    • Set aside to let the flavors meld.

  3. Cook the Coconut Rice

    • Make the rice. Rice recipe here.

    • Fluff with a fork once done.

  4. Grill the Chicken

    • Preheat the grill to medium-high heat- I like it on 400°F.

    • Cook the marinated chicken for about 8–10 minutes per side, or until fully cooked (internal temperature of 165°F/75°C). Check it to be safe.

  5. Assemble the Caribbean Bowl

    • Start with a base of coconut rice.

    • Add sliced jerk chicken on top or aside.

    • Spoon over the fresh mango salsa.

    • Garnish with extra herbs if desired.
