Coconut rice

Ingredients

2 cups of jasmine rice

1 cup of water

1 cup of light coconut milk

1 Tbsp coconut oil

spices: 1/4 tsp pink Himalayan salt, 1/4 tsp black pepper powder, 1/4 tsp thyme

Instructions

  • Rinse the jasmine rice until the water runs clear.

  • Place all the ingredients in the Instant Pot and cook on the Rice setting for 8 minutes.

    Enjoy!
