Shrimp, Guacamole and cucumber Appetizer
Sometimes, the best dishes are the ones that feel effortless yet look and taste absolutely stunning. One of my favorite appetizers to serve when I want something fresh, vibrant, and a little special is this simple combination: shrimp, homemade guacamole, and crisp cucumber slices.
It's a dish that feels light yet satisfying, luxurious but incredibly easy to put together. Perfect for summer gatherings, brunches, or anytime you want a beautiful starter that leaves people reaching for seconds.
Freshness is Everything! The foundation of this appetizer is freshness:
Homemade guacamole — creamy, flavorful, and alive with the brightness of lime and fresh herbs.
Lemony shrimp — marinated just long enough to soak up flavor, then quickly cooked until juicy and tender.
Cucumber slices — cool, crisp, and the perfect canvas for the rich and savory toppings.

RECIPE
Ingredients:
1 lb shrimp, deveined
Marinade:
2 tbsp olive oil
1 tbsp salt-free lemon pepper
2 tbsp soy sauce
1/2 tsp pink Himalayan salt
1 tsp paprika
1 cucumber
Homemade guacamole
Instructions:
Prepare the marinade: In a bowl, combine olive oil, lemon pepper, soy sauce, pink Himalayan salt, and paprika. Add the shrimp and marinate for at least 1 hour.
Make the guacamole: While the shrimp marinates, prepare your homemade guacamole.
Cook the shrimp: Heat a pan over medium-high heat. Sauté the shrimp for about 1 minute on each side, being careful not to overcook them.
Slice the cucumber: Cut the cucumber diagonally to create larger, bite-sized slices.
Assemble the appetizer: Place a teaspoon of guacamole on each cucumber slice, top with a cooked shrimp, and serve immediately.
