Power Green chimichurri

This Power Green Chimichurri is my go-to for adding depth, freshness, and medicinal value to proteins, roasted vegetables, and even grain-free bowls. While traditional chimichurri hails from Argentina and is typically made with parsley and oregano, this version uses cilantro, parsley, and lovage (a beloved Romanian culinary herb) — three culinary powerhouses that deliver more antioxidants, phytonutrients, and flavor than ever.

It may not be traditional, but it is intentionally functional.

What Makes This Chimichurri “Power Green”? Most chimichurris are herb-forward. But this one is therapeutic. We’re taking culinary herbs and turning them into true healers by layering their benefits and using them generously — not just as a garnish. This version is also:

RECIPE

Ingredients

  • 50g fresh parsley, finely chopped

  • 50g fresh cilantro, finely chopped

  • 25g fresh lovage, finely chopped

  • 1.5 cups olive oil

  • 2 Tbsp apple cider vinegar

  • 2 Tbsp lemon juice

  • 1 tsp garlic powder

  • 1 tsp pink Himalayan salt

  • 1 tsp chili flakes

  • ½ tsp black pepper

Instructions

  1. Prep your ingredients: Measure everything out and finely chop all the fresh herbs by hand (avoid blending to preserve texture and flavor).

  2. Combine: In a mixing bowl, add the chopped herbs along with the olive oil, vinegar, lemon juice, and spices. Stir well to combine.

  3. Rest: Transfer the chimichurri to a clean glass jar. Let it sit at room temperature for a couple of hours to allow the flavors to develop and intensify.

  4. Store: Keep in the fridge for up to 5 days. Stir before each use.
