Pineapple tofu Thai curry

This Thai-Inspired Tofu Pineapple Curry is comfort food in a bowl. Sweet, tangy, and full of crunchy veggies for the most refreshing vegan curry you’ve ever tasted!

I am a big fan of Thai food, but anything pineapple works for me! It adds a touch of tangy sweetness that’s the perfect complement to creamy coconut milk and Thai curry spices. This Vegan Tofu Pineapple Curry brings all of the mouthwatering Thai flavors together, plus it’s loaded with rainbow veggies and hearty tofu. 

It is an easy one-pot meal, quick to make, and you can serve it as lunch or dinner. You can enjoy it with brown or wild rice for added carbs or cauliflower rice for a low-carb version. 

RECIPE

Ingredients

1 block firm tofu or pre-cooked chicken

1 lb broccoli, chopped

1 lb pineapple, diced

2 medium carrots, coined

1 red bell pepper, sliced

1 small red onion, sliced

1 Tbsps honey

3 Tbsps avocado oil

2 Tbsp ginger-garlic paste

2 Tbsp Thai red curry paste

1/4 cup gluten-free soy sauce or coconut-aminos

2 cans of coconut milk

2 cups of water

1 bunch of cilantro, chopped

1 Tbsp lime juice

pink Himalayan salt for seasoning

Instructions

  • Heat the avocado oil in a pot, add the garlic-ginger paste, Thai curry paste, and onion, and sauté everything for 2 minutes;

  • Add the carrots, bell pepper, and soy sauce, and sauté for 3 min;

  • Add coconut milk, honey, water, tofu (or pre-cooked chicken), broccoli, and pineapple, and simmer everything for another 30 min on medium-low

  • Add the lime juice and chopped cilantro;

  • Taste and add more soy sauce or salt, depending on your preferences;

  • Serve with brown or wild rice.
