RECIPE
Ingredients
1 kg pre-cooked meatballs (use my Mediterranean Meatballs recipe or your favorite homemade or even store-bought meatballs)
1.7 kg tomatoes, roughly chopped (a mix of colors adds beautiful flavor and color - eat the rainbow)
300 g sweet potatoes, peeled and cut into chunks
200 g carrots, cut into chunks
200 g red onions, roughly chopped
20 g garlic cloves
400 ml canned coconut milk
4 cups water or vegetable broth
Seasonings
1 Tbsp Himalayan salt
1 tsp ground black pepper
1 Tbsp paprika
1 Tbsp dried oregano
½ tsp chili flakes
To Serve
Fresh basil leaves
Instructions
Prepare all the vegetables by washing, peeling (if needed), and chopping them into large chunks.
Add the tomatoes, sweet potatoes, carrots, onions, garlic, coconut milk, water (or vegetable broth), and all the seasonings to the Instant Pot. Do not add the meatballs yet. (If you don’t have a pressure cooker just use a soup pot and boil until everything is soft.)
Seal the lid and cook on High Pressure for 45 minutes.
Once the cooking cycle is complete, carefully release the pressure. Transfer the soup to a large pot if needed, then blend until completely smooth using an immersion blender. Alternatively, blend in batches using a countertop blender, taking care when blending hot liquids.
Taste the soup and adjust the seasoning with additional salt and pepper if desired.
Add the pre-cooked meatballs to the blended soup and simmer gently for 15 minutes, allowing them to heat through and absorb the flavors.
Ladle into bowls and garnish generously with fresh basil before serving.
