Green bone broth (with culinary herbs)

If you’ve been following me for a while, you already know that bone broth is a daily ritual in my home—and something I strongly recommend to all my clients. Whether you're navigating hormonal shifts, supporting digestion, trying to lose weight or simply trying to nourish your body at a deeper level, bone broth is one of the most accessible and healing foods you can add to your day.

On my blog, you’ll already find my classic bone broth recipe here (rich in the usual aromatics and bones), and my Red Bone Broth here (with beets, red Swiss chard, and sorrel—deeply grounding and blood-building). But today I’m excited to share something seasonal and incredibly vibrant: my Green Bone Broth.

This version came to life thanks to my garden, which is currently overflowing with fresh green herbs and aromatics. I’ve used: Lovage, Basil, Oregano, Parsley, Green onions, and Green garlic, all organic from my garden!

These aren’t just flavorful additions—they’re functional. Each one brings powerful phytonutrients, essential oils, and minerals that support detoxification, liver function, and inflammation regulation.

Why Bone Broth Is Essential for Women’s Health?

1. Collagen and Gelatin for Skin, Joints & Gut Lining

The combination of chicken feet and beef neck bones ensures this broth is rich in gelatin and collagen—key for skin elasticity, joint mobility, and maintaining the integrity of the gut lining (especially important for women with leaky gut, food sensitivities, or autoimmune conditions).

2. Mineral Support for Hormone Balance

The bones and greens create a highly mineral-rich broth, loaded with magnesium, calcium, potassium, and trace minerals—all crucial for hormone synthesis, nervous system regulation, and electrolyte balance (especially important during PMS, perimenopause, or adrenal burnout).

3. Liver and Estrogen Detox Support

Green herbs like parsley, basil, oregano, and lovage are naturally detoxifying and support Phase 1 and Phase 2 liver detox pathways. This is essential for proper estrogen metabolism—which in turn supports hormonal harmony, clearer skin, fewer PMS symptoms, and better mood regulation.

4. Immune and Gut Resilience

Broth made with green garlic and onion contains sulfur compounds (like allicin) that help modulate the immune system and feed beneficial gut bacteria. This is foundational for gut health, which is linked to mood, energy, and hormonal balance in women.

How to Use It

  • Drink 1 cup daily on an empty stomach or between meals

  • Use as a base for healing soups with vegetables and shredded meat

  • Add to pureed veggie soups for extra protein and minerals

  • Freeze in silicone molds or jars for easy use throughout the week

RECIPE

Ingredients

  • 4 lb mixed bones (chicken feet, beef neck bones, turkey tails – for collagen, marrow, and richness)

  • 250g fresh greens and herbs: lovage, basil, oregano, parsley, green onions, green garlic

  • 1.5 Tbsp pink Himalayan salt

  • 1 tsp black peppercorns

  • 1/4 cup apple cider vinegar (to help extract minerals from the bones)

  • Filtered water to cover

    Instructions

  • Prep all your ingredients, defrost the bones, and wash your herbs;

  • Add all the ingredients to the Instant Pot and cover with water to the max line;

  • Simmer everything in the Instant Pot on the soup setting (high pressure) for 1 hour, followed by a natural pressure release.

  • Strain the liquid, discard the solids.

  • Add more salt as needed when you drink it.

  • Keep the broth in the fridge up to 5 days or freeze.
