“Eiersalat” German-style egg salad

One of the joys of learning new recipes from family is the connection to tradition and culture it brings. My German mother-in-law shared with me a fantastic recipe for Eiersalat, a German-style egg salad that combines the rich creaminess of eggs with the refreshing crunch of apples and radishes. This dish is simple, yet packed with flavor, and offers some impressive health benefits that make it perfect for any occasion.

Eiersalat is a staple in German cuisine, often enjoyed as a light meal, appetizer, or side dish. What sets this version apart is the addition of crisp apples and radishes, which add an unexpected yet delightful freshness to the salad. The combination of creamy boiled eggs with these crunchy vegetables creates a beautiful balance of textures, while the dressing—typically a mix of mayonnaise, mustard, and a touch of vinegar—brings everything together in a harmonious way.

RECIPE

Ingredients

8 medium boiled eggs, diced

1 small apple, diced

2 radishes, diced

3 oz sweet pickles, diced

1 green onion, diced

a handful of fresh dill

1/2 cup mayo

2 Tbsp pickle juice

1 Tbsp dijon mustard

1/2 tsp pink Himalayan salt

1/2 tsp black pepper powder

Instructions

  • Boil, peel, and dice the eggs.

  • Dice the apple, radishes, sweet pickles, and green onion.

  • In a large bowl, combine the diced ingredients with the fresh dill.

  • Add the mayo, pickle juice, Dijon mustard, salt, and pepper.

  • Mix everything together until well combined.

  • Serve chilled and enjoy this flavorful and refreshing egg salad!
