Egg Bhurji (Indian-style scrambled eggs)
Eggs are a timeless staple in any nutrient-dense kitchen, and when combined with anti-inflammatory spices, fresh herbs, and vibrant vegetables, they become more than just a quick breakfast—they transform into a therapeutic meal. Today I’m sharing one of my favorite comfort dishes with deep roots in Indian cuisine: Egg Bhurji, also known as Indian-style spiced scrambled eggs.
This recipe is warming, protein-rich, and brimming with flavor. It’s quick to prepare and incredibly satisfying, making it a perfect option for any time of day—whether you’re starting your morning with something hearty, refueling after a workout, or winding down with a nourishing dinner.

RECIPE
Ingredients:
7 eggs
1 Tbsp avocado oil or animal fat
100g chopped onions
100g chopped tomatoes
A handful of fresh cilantro or parsley
1/2 lime, juiced
Spices:
1 tsp pink Himalayan salt
1 tsp cumin seeds
1 Tbsp garlic-ginger paste
2 tsp garam masala
1/2 tsp turmeric powder
1/2 tsp black pepper
1 tsp chili flakes (optional, adjust to taste)
Instructions:
Prepare all ingredients: chop the onions, tomatoes, and herbs, and crack the eggs into a bowl. Beat the eggs until well mixed.
Heat the oil in a pan over medium heat. Add the cumin seeds, garlic-ginger paste, garam masala, turmeric, and chili flakes. Bloom the spices for about 30 seconds, stirring constantly, until aromatic but not burnt.
Add the chopped onions and tomatoes. Sauté for about 3 minutes, or until they soften.
Pour the beaten eggs into the pan and stir gently until cooked to your desired consistency.
Turn off the heat, stir in the chopped cilantro or parsley, and finish with a squeeze of lime juice.
Serve with rice, cauliflower rice, gluten-free bread or more sautéed veggies.
