Curried roasted nuts

I'm always in search of new ways to diversify my meals by eating a variety of colorful foods. Eating a diverse range of foods can be as simple as choosing different types of nuts instead of sticking to just one. Even if some of the spices we add to our dishes don't have the distinct colors of the rainbow, they can still be colorful and have anti-inflammatory properties.

One of my favorite snacks to make is curried nuts. They are sweet, crunchy, savory, and spicy, loaded with healthy fats, and low in carbs.

RECIPE

Ingredients

1 cup raw almonds

1 cup raw cashews

1 cup pecans
1 cup walnuts

1/3 cup maple syrup
1 Tbsp coconut oil, melted
1 tsp pink Himalayan salt
2 Tbsps curry powder, mild or hot

1 Tbsp Garam Masala Powder

Instructions

  • Preheat oven to 300°F;

  • Prepare a baking sheet with parchment paper;

  • Mix the nuts together in a mixing bowl;

  • Add the maple syrup, coconut oil, curry powder, garam masala, and salt, and mix well;

  • Arrange the nut mix on the parchment paper in a single layer;

  • Bake for 20 minutes, mix thoroughly, bake for another 20 minutes;

  • Mix the nuts again at the end, making sure they don't get stuck to the parchment paper. Cool, transfer to a container, and serve.
