Breakfast patties

I started making these patties as a complex breakfast option. However, I soon realized that they are my favorite snack to take with me when traveling. These patties are high in protein and contain high amounts of fiber, diversity, and flavors.

This recipe is a great example if you are looking for a kid's meal or a way to hide veggies. Either way, I highly recommend trying this recipe. Hopefully, you'll like it and add it to your repertoire.

These patties taste good flavored with salt and pepper, but adding a spice mix takes the flavor to the next level. I am a big fan of Turkish baharat, but any spice mix works- don't get lost in small details.

RECIPE

Ingredients

2 lbs ground turkey/chicken meat

1 small sweet potato, peeled and shredded

2-3 medium rainbow carrots, peeled and shredded

1/2 red onion, finely chopped

2 green onions, finely chopped

2 cloves of garlic, diced

a handful of spinach, finely chopped

3 small eggs or 2 medium

spices: 1 tsp paprika powder, 1 tsp pink Himalayan salt, 1/2 tsp ground black pepper, 1.5 Tbsp Turkish baharat (or spice mix of choice)

2 Tbsp olive oil

3 Tbsp buckwheat flour

Instructions 

  • Prep all the ingredients. Peel, chop, and shred all the veggies; 

  • Add all the ingredients to a bowl and mix well until you get a homogeneous paste; 

  • Line a baking tray with parchment paper, and start making the patties; 

  • Take 100g of mixture, create a patty, and place it on the baking tray. Make patties out of the entire quantity- you should get around 15 pieces; 

  • Heat up your oven at 400F, place the baking tray inside, and bake for 35 minutes, flipping the patties halfway to ensure even cooking; 

  • Serve with mayo, rice, and more veggies.
