1lb rainbow carrots or regular (I used orange, purple and yellow carrots)
glaze: 2 Tbsp balsamic vinegar, 2 Tbsp honey, 2 Tbsp avocado/olive oil, 1 Tbsp vegetable seasoning of choice, 1 tsp pink Himalayan salt (if the seasoning mix is salt-free)
Instructions
Preheat your oven to 400°F.
Prep the carrots by washing them thoroughly and peeling if needed.
In a small bowl, whisk together the balsamic vinegar, honey, oil, seasoning, and salt to create the glaze.
Arrange the carrots in a single layer on a baking dish or sheet pan. Drizzle the glaze evenly over the carrots, tossing gently to coat.
