Turmeric fennel rice (the InstantPot version)
I have to admit—ever since I got my Instant Pot eight years ago, it’s been my go-to for cooking rice. It turns out perfect every time! This pot is a game-changer—you can make everything from soups and stews to rice, bone broth, and boiled beans. I’m obsessed!
About this rice - fragrant, golden, and packed with both flavor and nutrients, my turmeric fennel rice with garlic & salted mixed nuts is a simple yet vibrant dish that pairs beautifully with a variety of meals. The warmth of turmeric, the subtle licorice notes of fennel, and the deep umami of garlic create a comforting and aromatic rice, while the crunch of salted mixed nuts adds texture and richness.

Recipe
Ingredients
2 cups of rice (basmati or jasmine)
2 cups of water
3 Tbsp of olive oil
1 cup of mixed nuts
spices: 1 tsp turmeric powder, 1 Tbsp fennel seeds, 1 tsp pink Himalayan salt, 1 tsp garlic powder, 1/2 tsp black pepper powder
Instructions
Prepare and measure all ingredients;
Rinse the rice three times until the water runs clear;
Add the rice to the InstantPot, 2 cups of water, the olive oil, and the spices. Stir well to combine;
Secure the lid, set the InstantPot to the Rice setting, and cook for 8 minutes;
Once the cooking time is up, release the pressure naturally. Remove the lid and stir in the mixed nuts;
Cover the pot again for a few minutes, allowing the nuts to soften slightly from the residual heat;
Fluff the rice and serve with your favorite stew or grilled meat.
