Tempeh mushroom pate

Did you grow up eating liver pate? I did! My mom used to make homemade liver pate, and it was delicious. I remember how excited I got when she mentioned “pate”. Years later, like everyone else, I started to buy liver pate from the store....you learn as you grow!

Now, being a vegetarian, is one of the things I got to miss, my pate. I like having different spreads to enjoy as snacks, and there is only so much hummus and guac one can eat. No offense to hummus and guac- still enjoy them daily.

One day, while sauteeing some tempeh with a mustard sauce, it hit me: OMG, this smells like liver pate!!!! So again, I decided to try and see if I could recreate a childhood favorite. And I did!!!!

RECIPE

Ingredients

  • 16oz tempeh

  • 24 oz/700g mushrooms

  • 1/2 yellow onion, roughly sliced

  • 1 tsp garlic powder or 3 garlic cloves, roughly sliced

  • 1 Tbsp miso paste

  • 3 Tbsp avocado oil

  • 1/4 cup soy sauce

  • 3 Tbsp mustard

  • 1 teaspoon thyme

Instructions

  • Get all the ingredients together;

  • Slice the tempeh into 1/4 inch pieces, wash the mushrooms;

  • In a pan, add 2 Tbsp of the avocado oil, the soy sauce, and the mustard, mix well;

  • Gently arrange all the tempeh slices, and cook for 3 minutes on each side, at medium temperature- the idea is for the tempeh to get some flavor from the soy sauce and mustard;

  • Remove the tempeh from the pan, and place it in a bowl;

  • In the same pan, add 1 Tbsp of avocado oil, cook the onion, garlic, and mushrooms for 10 minutes at medium heat, until fully cooked;

  • Into a blender, add the cooked tempeh, the cooked mushrooms, thyme, and a splash of water; 

  • Blend everything into a smooth paste. 

Enjoy with gluten-free crackers or bread!

TIP- I like eating my pate on a gluten-free cracker with a teaspoon of jam, preferably sour cherry jam.
