Tahini lemon Brussels sprouts

In a season of eating all junk and sweets, and indulging in all forbidden ingredients, here I am presenting a fun way to incorporate one of the most hated veggies- the mighty Brussels sprouts!

I have to be honest and say that I wasn't always a fan of Brussels sprouts, but this recipe would convert anyone.

RECIPE

Ingredients

3 cups Brussels sprouts, cut in half

4 Tbsp tahini

3 Tbsp gluten-free soy sauce

4 Tbsp water

3 Tbsp lemon juice, plus more for serving

2 Tbsp garlic-ginger paste, store-bought or just garlic

2 Tbsp nutritional yeast (optional, for a cheesy flavor)

rainbow baby tomatoes for decorating

1 carrot for the tree leg

Instructions

  • Prep and cut your Brussels sprouts and put them into a bowl;

  • Make the tahini sauce by mixing all remaining the ingredients into a bowl (not the tomatoes and carrot);

  • Add the tahini sauce over the Brussels sprouts, and mix well, making sure that all the veggies are evenly coated;

  • Bake at 400°F for 25 minutes. Take the tray out halfway through to flip the sprouts;

  • .When the sprouts are cool enough to handle, start designing the Christmas tree in your desired pattern;

  • Cut a carrot and caramelize it in a pan until brown- use it as the tree leg;

  • Arrange the baby rainbow tomatoes to resemble tree decorations;

  • Serve with more lemon juice.

After I chopped all the sprouts, I created the Christmas tree to be sure I cut enough pieces to work with in my final project. I always cut more than I need to have a little wiggle room when designing.
