Stuffed dates

I don't bake or make many desserts because I don't want to end up eating them :)) It's as simple as that.

I grew up eating dates and dried figs as my dad always kept boxes of them in our house, and I still do! Dates are so sweet and juicy, but if you fill them with your butter of choice, they become a decadent dessert.

You can use any nut butter of choice like cashews or almonds, or even seed butter like sunflower butter or pumpkin seeds butter. If nuts and seeds aren't allowed in your diet, use coconut butter and create an AIP dessert. I love adding berries for a little zing to cut the sweetness.

RECIPE

Ingredients

10 organic dates, pits removed

coconut butter or nut/seed butter of choice (peanut, almond, sunflower, pumpkin)

raspberries or berries of choice

Instructions

  • Remove the pits from every date, and fill it with the nut or coconut butter;

  • You can put them in the fridge for 30 minutes to set;

  • Add the berries, and you can dip the stuffed dates in melted dark

    chocolate.
