Roasted za’atar chickpeas

Roasted chickpeas are one of my favorite savory snacks. This snack is easy to make, delicious, and holds up great while traveling, which makes it a perfect snack for a plane ride.

If you are not a za'atar fan, you can choose other spices like smoked paprika, lemon pepper, or dried herbs like dill and parsley.

RECIPE

Ingredients

4 cups boiled chickpeas

4 Tbsps za'atar spice

2 Tbsp lemon pepper

2 Tbsp dry thyme

1 tsp pink Himalayan salt

5 Tbsp olive oil

Instructions

  • Prep and cook your chickpeas as explained in this blog post;

  • Mix all ingredients well;

  • Line a sheet pan with parchment paper, add the chickpeas, and bake at 400°F;

  • Cook for 20 mins, mix well again, and cook for another 20 minutes, or until crispy.
