My version of Nuoc Cham stays true to its roots while offering a slightly modern, health-conscious twist. It’s gluten-free and naturally sweetened, and there’s even a vegan option so everyone can enjoy it.

What Makes Nuoc Cham So Special?

The beauty of this sauce lies in its harmony. With just a few ingredients, you get complexity and depth that enhance the flavors of fresh herbs, vegetables, rice noodles, grilled proteins, or anything else you pair it with.

Here’s what goes into this magical mix:

  • Fish sauce – Rich in umami and saltiness, it’s the star ingredient. Make sure to choose a clean version with only fish, salt, and water. For a vegan take, substitute with vegan fish sauce or gluten-free soy sauce.

  • Maple syrup – This natural sweetener replaces refined sugar, giving the sauce a deep, mellow sweetness.

  • Lime juice + rice vinegar – These two acids balance the salt and sweet, adding that signature tang.

  • Ginger-garlic paste– Adds boldness, depth, and gut-boosting benefits.

Ingredients

1/4 cup of fish sauce, gluten-free

1/4 cup maple syrup

1/4 cup water

2 Tbsp lime juice

1 Tbsp rice vinegar

1 Tbsp ginger-garlic paste

1/2 tsp chili flakes

1 Thai chili, chopped or more, depending how spicy you want it
