I'll be the first to admit that natto isn't for everyone, but its health benefits are undeniable. Packed with the powerful enzyme nattokinase and the beneficial bacteria Bacillus subtilis, this fermented superfood is a nutritional powerhouse. While its unique taste and texture may take some getting used to, I highly encourage you to try it at least once—you might just end up loving it as much as I do!

Ingredients

1-2 slices of gluten-free bread of choice (my recipe here)

quick egg salad: 2 boiled eggs, 1 Tbsp mayo, a pinch of salt, a pinch of black pepper, some chopped fresh dill

natto mix: 2 Tbsp natto. 1 Tbsp of gluten-free soy sauce, 1 Tbsp of honey mustard

chopped green onions for decoration

Instructions

  • Prepare the egg salad by mixing chopped boiled eggs with mayonnaise, salt, pepper, and dill until well combined.

  • In a separate bowl, make the natto mix by combining natto with gluten-free soy sauce and mustard, then mix well.

  • Toast the bread slice(s), spread a generous layer of egg salad on top, add the natto mixture, and finish with a sprinkle of chopped green onions.
