Lamb harira-inspired Moroccan soup

Inspired by traditional Moroccan Harira, this hearty soup combines ground lamb, red lentils, chickpeas, tomatoes, and warming spices into a deeply satisfying meal. This gluten-free version offers a balance of protein, fiber, healthy fats, and plant nutrients, making it a nourishing addition to a varied, whole-food diet. Comforting yet nutrient-dense, it is a wonderful example of how simple ingredients can support overall health while delivering plenty of flavor.

Red lentils and chickpeas provide dietary fiber, plant protein, and complex carbohydrates. Their fibers help nourish beneficial gut bacteria, which produce short-chain fatty acids involved in supporting intestinal function and gut barrier health. Legumes also contribute to dietary diversity, an important component of a healthy gut microbiome.

Ground lamb adds high-quality complete protein, heme iron, zinc, and vitamin B12. These nutrients support several essential functions, including oxygen transport, energy metabolism, immune health, and tissue maintenance. Protein is particularly important for women during midlife, when changes in body composition and age-related muscle loss make maintaining lean muscle increasingly relevant.

The spice blend brings both depth of flavor and a variety of plant compounds. Ginger has a long history of use for digestive comfort, while turmeric contains curcumin, which has been studied for its antioxidant and anti-inflammatory properties. Garlic, onions, cumin, coriander, cinnamon, and black pepper contribute additional flavor and naturally occurring bioactive compounds.

Finish the soup with fresh parsley, lemon juice, and pickled red onion for brightness and contrast. The citrus complements the richness of the lamb, while the fresh herbs bring a final layer of flavor. Make a generous batch for easy lunches or dinners throughout the week. This Moroccan-inspired Harira is a comforting, protein-rich, fiber-containing meal that brings together traditional flavors and practical nutrition in one nourishing bowl.

RECIPE

Ingredients

  • 1 cup red lentils, soaked overnight, drained

  • 1 can garbanzo beans (chickpeas), boiled

  • 1 can (450g) diced tomatoes

  • 2 medium carrots, diced

  • 1 small red onion, diced

  • 1 cup rainbow bell peppers, chopped

  • 450 g ground lamb or beef

  • 1 bunch fresh parsley, chopped

  • 2 Tbsp olive oil, avocado oil, or animal fat

  • 2 Tbsp lemon juice

  • 6 cups water

Spices

  • 1 tsp black pepper

  • 1 tsp turmeric

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 2 Tbsp ginger-garlic paste

  • ½ tsp cinnamon

  • ½ tsp chili flakes (adjust to heat preference)

  • 1 Tbsp pink Himalayan salt

Instructions

  1. Prep ahead: Soak the red lentils and chop all vegetables and herbs. Measure out all the spices.

  2. Bloom the spices: In a large soup pot, heat oil over medium heat. Add the spices and stir for 30 seconds until aromatic.

  3. Flavor the meat: Add the ground lamb to the pot and sauté for 5 minutes, allowing it to absorb the spice blend and cook through.

  4. Sauté the veggies: Stir in the onion, carrots, and bell peppers. Cook for another 5 minutes until softened.

  5. Simmer the stew: Add the diced tomatoes, chickpeas, soaked lentils, and water. Bring to a simmer and cook for 30 minutes to allow the flavors to meld and the lentils to fully cook.

  6. Finish and serve: Turn off the heat. Stir in lemon juice and chopped parsley. Taste and adjust seasoning if needed.

  7. Serve with more fresh parsley and pickled red onion.
